Our heat source and/or smoking wood is a critical component in the overall flavor of the meat, vegetable, or side dish we are cooking. There is an optimal burn rate and fire temperature that produces the best smoke flavor.
Our goal is to burn a clean fire that produces that highly sought-after clear blueish smoke. Here are some fire management factors (FMF) we consider on every cook.
