Always exercise caution when handling raw meat and the cryovac bag. Feel free to use your own favorite rub or seasonings. The mustard is used as a binder for the seasonings to adhere to. Apply seasonings to both sides of the sparerib. Be mindful of the amount of salt already contained in the BBQ rub you choose to use. You do not want to over salt. Meat absorbs smoke better when cold. We mix our wood chunks throughout the lump charcoal. We are aiming to produce a Maillard Reaction or Browning Effect before pulling the ribs off the smoker. Double-layered heavy duty aluminum helps to prevent leaks or punctures when wrapping the spareribs.
