What's our secret to creating "legendary" barbecue? It is the ability to consistently apply this one key principle with every cook.

1. Fire Management

Our heat source and/or smoking wood is a critical component in the overall flavor of the meat, vegetable, or side dish we are cooking. There is an optimal burn rate and fire temperature that produces the best smoke flavor. 

Our goal is to burn a clean fire that produces that highly sought-after clear blueish smoke. Here are some fire management factors (FMF) we consider on every cook.

  1. Fuel Source: all-natural wood, lump charcoal, char-logs, or briquettes.
  2. Smoking Wood Size: logs, splits, chunks, chips
  3. Kiln Dried vs Weather Seasoned
  4. Wood Type: Hickory, Post Oak, Pecan, White Oak, Cherry, Mesquite
  5. Wood Moisture Content
  6. Fire Basket Fill Ratio
  7. Airflow & Oxygen
  8. Convection
  9. Fire Box Temperature
  10. Burn Stage
